I came across this recipe in Prevention Magazine and it sounds like a healthy, low calorie way to satisfy your sweet tooth. By the way the 215 calories is for two 6″ tacos.
- 2 soft corn tortillas
- 2 Tbsp natural peanut butter
- 1 cup mixed berries or chopped fruit such as kiwi, pineapple, strawberries, bananas, or apples
- 1 Tbsp shredded coconut
Warm tortillas in microwave 10 seconds. Spread each with 1 tablespoon of the peanut butter. Fill each with half of the fruit and sprinkle evenly with coconut. Fold or roll and enjoy.
Buying tip: Two 6-inch tortillas of any kind generally provide about the same amount of calories and carbs as one large wrap. Two mini servings seems like more food, and if you eat just one . . . you might feel the same satisfaction with only half the calories.
